Ingredients

  • 1 tablespoon olive oil
  • 4 ounces pancetta diced
  • 1 medium eggplant cut into ½-inch cubes
  • ½ teaspoon salt or to taste
  • ¼ teaspoon freshly ground black pepper
  • ¼ teaspoon red pepper flakes
  • 2 cloves garlic minced
  • 1 cup cherry tomatoes halved
  • 1 24-ounce jar marinara sauce
  • 1 pound penne pasta
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons chopped fresh basil

Method

  1. Heat olive oil in a large skillet over medium heat. Add diced pancetta and cook until browned and crisp, about 5 minutes.
  2. Add the cubed eggplant, salt, black pepper, and red pepper flakes. Cook, stirring occasionally, until the eggplant becomes tender and lightly browned, about 10 minutes.
  3. Stir in the minced garlic and cook for about 30 seconds, just until fragrant.
  4. Add the halved cherry tomatoes and cook until they soften, about 3 minutes.
  5. Pour in the marinara sauce and simmer for about 10 minutes, allowing the flavors to combine.
  6. Meanwhile, bring a large pot of lightly salted water to a boil. Cook the penne pasta according to package directions until al dente. Drain well.
  7. Add the cooked pasta directly to the sauce and toss until the penne is evenly coated.
  8. Serve warm, topped with grated Parmesan cheese and fresh basil.

Notes

  • The pancetta adds a salty, savory flavor and a crispy texture to the sauce.
  • Eggplant should be cooked until tender and lightly browned for the best texture.
  • Red pepper flakes can be adjusted depending on your preferred spice level.
  • Parmesan cheese and fresh basil are added at the end to brighten and finish the dish.
  • Although penne is used in this recipe, other pasta shapes can work well with the sauce.
