Ingredients

  • 3/4 cup (170 g) unsalted butter, softened
  • 3/4 cup (150 g) packed brown sugar
  • 1/2 cup (170 g) unsulphured molasses
  • 1 large egg at room temperature
  • 1 teaspoon vanilla extract
  • 3 cups (360 g) all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons ground ginger
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon fine salt
  • 1/4 cup (50 g) granulated sugar, for rolling

Equipment

  • Large mixing bowl
  • medium mixing bowl
  • electric hand mixer or stand mixer
  • baking sheets
  • parchment paper
  • cookie scoop
  • wire cooling rack

Method

  1. Whisk the flour, baking soda, ginger, cinnamon, cloves, nutmeg, and salt together in a medium bowl.
  2. In a large bowl, beat the butter and brown sugar until light and fluffy, about 2 minutes. Beat in the molasses, then the egg and vanilla, until smooth.
  3. Mix the dry ingredients into the wet ingredients on low speed just until a soft dough forms.
  4. Cover and chill the dough for at least 1 hour, or up to 2 days.
  5. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  6. Roll the dough into 1 1/2-tablespoon balls, coat each in granulated sugar, and place 2 inches apart on the sheets.
  7. Bake 9 to 11 minutes, until the edges are set and the centers look puffed and slightly soft.
  8. Cool on the pan for 5 minutes, then transfer to a wire rack.

Notes

Do not overbake — soft centers are the goal, and the cookies set as they cool.
Make ahead: dough keeps 2 days in the fridge; dough balls and baked cookies freeze up to 3 months.
Store baked cookies airtight at room temperature for up to 5 days; a bread slice in the container keeps them soft.
