Ingredients

  • 1 pound pasta of choice protein pasta was used in the original recipe
  • 2 tablespoons olive oil
  • 4 cloves garlic thinly sliced
  • ¼ teaspoon crushed red pepper flakes
  • 2 6.5-ounce cans chopped clams, drained, juice reserved
  • ¾ cup clam juice
  • 1 cup good-quality marinara sauce
  • 1 tablespoon unsalted butter
  • 2 tablespoons finely chopped fresh parsley
  • Salt and freshly cracked black pepper to taste
  • Lemon juice to taste (optional)

Method

  1. Fill a large pot with water and bring it to a rolling boil. Add salt and the pasta, then return to a boil. Cook uncovered, stirring occasionally, until the pasta is just shy of al dente, approximately 6 minutes or according to the pasta's cooking requirements.
  2. Before draining, reserve 1 cup of the starchy pasta cooking water. Drain the pasta and keep it warm.
  3. While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the thinly sliced garlic and crushed red pepper flakes. Cook gently for about 45 seconds, stirring until fragrant without allowing the garlic to brown.
  4. Pour ¾ cup of the reserved clam juice into the skillet. Bring to a gentle simmer and cook for 4–5 minutes, allowing the liquid to reduce slightly and develop flavor.
  5. Stir in the marinara sauce and simmer for another 3–4 minutes, until the tomato sauce and clam juice are well combined.
  6. Add the drained chopped clams and heat gently for 1–2 minutes. Avoid boiling them vigorously, as excessive cooking can make the clams tough.
  7. Transfer the drained pasta directly into the skillet. Toss continuously to distribute the sauce evenly. Gradually add small splashes of reserved pasta water while tossing until the sauce becomes glossy and lightly coats the noodles.
  8. Turn off the heat. Add the unsalted butter and chopped fresh parsley, tossing until the butter melts and blends into the sauce.
  9. Taste and adjust with salt, freshly cracked black pepper, and a little lemon juice if desired.
  10. Serve immediately while the pasta is warm and the sauce is silky.

Notes

  • Use your preferred pasta variety. Protein pasta was used in the supplied recipe, but other pasta shapes can also work.
  • Drain the canned clams over a bowl to collect their juice rather than discarding it.
  • Measure ¾ cup of clam juice for the sauce.
  • Reserve 1 cup of pasta cooking water before draining. Add it gradually while tossing to create a glossy sauce that lightly coats the noodles.
  • Avoid overcooking the clams, which only need a short period of gentle heating.
  • Lemon juice is optional and can be added at the end to brighten the flavor.
  • The supplied recipe lists 4–5 servings, while its nutritional information is based on 4 servings.
