Ingredients

  • 2 cups pitted dates
  • ½ cup raw pecans
  • ½ cup raw cashews
  • 2 Tablespoons cocoa powder
  • ½ tsp fine sea salt
  • 2 Tablespoons almond butter
  • 1 Tablespoon unsweetened almond milk
  • ½ teaspoon pure vanilla extract

Method

  1. Line a baking pan with wax paper and set it aside as a surface for the rolled bites; no baking is needed.
  2. Process the dates, pecans, and cashews together in a food processor fitted with an S-blade until finely and evenly chopped.
  3. Add the cocoa powder, salt, almond butter, almond milk, and vanilla in that order. Process until the mixture begins to clump together.
  4. Shape the mixture into balls using 1 Tablespoon of dough for each, and arrange them on the prepared baking pan.
  5. Transfer the balls to an airtight container and refrigerate or freeze until chilled and firm.
  6. Serve cold or at room temperature.

Notes

Pecans and Cashews: Other nuts may be substituted, keeping the total at 1 cup. Softer varieties such as pecans, cashews, and walnuts produce a more brownie-like texture than almonds.
Almond Butter: Other nut butters work well, particularly cashew butter.
Almond Milk: Another non-dairy milk may be used instead.
Sea Salt: Reduce or omit the salt if using salted nuts.
Storage: Store in an airtight container in the refrigerator for up to 2 weeks.
Freezing: Freeze in an airtight container for up to 3 months.
Serving: These energy bites are especially enjoyable cold and can be eaten directly from the freezer or allowed to thaw slightly.
