Thai Red Curry Basil Beef Noodles

If you’re craving bold, takeout-style noodles but don’t feel like ordering in, this recipe has you covered. These Thai Red Curry Basil Beef Noodles come together in just 30 minutes with tender noodles, savory beef, fragrant basil garlic oil, and a rich red curry sauce that clings to every bite. Finish everything with a crisp pickled vegetable salad, and you’ve got a dinner that’s fresh, comforting, and full of vibrant flavor.

One of my favorite things about having a big family is that recipe inspiration seems to show up when I least expect it. Someone is always experimenting in the kitchen, putting their own spin on a favorite meal, or sharing a dish that’s too good not to recreate.

A few weeks ago, my brother Malachi sent me a photo of the dinner he’d made. He had taken one of my red curry noodle recipes and made it completely his own. Naturally, I had to know exactly what he did.

His version included ground beef cooked with onions and bacon, spooned over the noodles so every strand soaked up the rich curry sauce and fragrant basil garlic oil. He also tossed in broccoli, which made me laugh a little because growing up, anything green was definitely not at the top of his favorites list.

Inspired by his idea, I made my own version the very next evening. Since I didn’t have broccoli in the fridge, I borrowed a little inspiration from my sister Asher instead. She’s convinced almost any vegetable can be improved with a quick pickle, and honestly, she’s usually right. I threw together a simple pickled garden vegetable salad, and it turned out to be the perfect finishing touch.

The entire meal came together in about 30 minutes without ever turning on the oven. The noodles are rich, saucy, and loaded with flavor, while the crisp, tangy vegetables add a refreshing crunch that keeps every bite balanced. It’s one of those easy weeknight dinners that feels a little special—and the kind you’ll find yourself craving long after the bowls are empty. Sometimes the only challenge is resisting that “just one more bite” that somehow turns into an empty plate.

Ingredients

Everything in this recipe comes together with simple, easy-to-find ingredients that create layers of bold, fresh flavor. The rich curry beef, fragrant basil garlic oil, and crisp pickled salad balance each other beautifully, making every bite satisfying.

For the Pickled Salad

  • Shredded carrots
  • Cherry tomatoes
  • Toasted sesame oil
  • Lime juice
  • Rice vinegar
  • Fresh micro basil and cilantro

For the Thai Red Curry Beef

  • Sesame oil or avocado oil
  • Green onions
  • Thai red curry paste
  • Garlic
  • Fresh ginger
  • Chili flakes
  • Fresh Thai basil or regular basil
  • Fresh cilantro
  • Bacon
  • Ground beef (Ground pork, turkey, or chicken work just as well if you’d like to switch things up.)
  • Brown rice ramen noodles or rice noodles (Ramen is my favorite because it soaks up the sauce beautifully.)
  • Tamari or soy sauce
  • Roasted, salted cashews

Kitchen Equipment

You won’t need anything fancy for this recipe—just a few everyday kitchen tools.

  • A large bowl for the quick pickled vegetable salad
  • A large heatproof bowl for making the basil garlic oil
  • A large skillet with enough room to brown the bacon and beef evenly
  • A sharp chef’s knife
  • A sturdy cutting board
  • A few mixing spoons or spatulas

Once everything is prepped, this meal comes together surprisingly fast, making it a great choice for busy weeknights when you want something that tastes like it took much longer to make.

How to Make Thai Red Curry Basil Beef Noodles

Step 1: Prepare the Pickled Salad

Start by adding all of the salad ingredients to a large bowl. Toss everything together until well coated, then set it aside while you prepare the rest of the recipe. As it rests, the vegetables lightly pickle, becoming crisp, tangy, and incredibly refreshing.

This quick salad is the perfect contrast to the rich, saucy noodles. If you have extra vegetables like cucumbers, radishes, shredded cabbage, or snap peas in the refrigerator, feel free to toss them in—they all work beautifully.

Mila’s Tip: Using a bag of pre-shredded carrots is an easy shortcut that saves a few minutes without sacrificing flavor.

Step 2: Make the Basil Garlic Oil

Heat the oil in a large skillet until it’s hot but not smoking.

While the oil heats, combine the green onions, Thai red curry paste, garlic, ginger, basil, cilantro, and a pinch of chili flakes in a large heatproof bowl. Carefully pour the hot oil over the mixture, then stir until everything is fragrant and well combined.

This simple step creates the flavor foundation for the entire dish. The hot oil gently blooms the curry paste and fresh herbs, releasing incredible aroma and giving the noodles their signature bold, savory flavor. Your kitchen will smell amazing at this point—and that’s always a good sign.

Mila’s Tip: Have all of your herbs and aromatics chopped before heating the oil. Once it’s ready, you’ll want to pour it over the mixture immediately for the best flavor.

Step 3: Cook the Beef

Using the same skillet, cook the bacon until crisp and the fat has rendered. Add the ground beef and cook, breaking it into small pieces with a wooden spoon, until nicely browned.

Stir in the tamari or soy sauce and let everything cook together for another minute so the flavors meld.

The bacon adds a rich, smoky layer of flavor, while the tamari seasons the beef beautifully. Be sure not to scrape away those browned bits in the pan—they’re packed with delicious flavor.

Mila’s Tip: Start cooking the noodles while the beef browns so both components are ready at the same time.

Step 4: Cook the Noodles

Cook the ramen or rice noodles according to the package directions until just tender. Drain them well, then immediately toss the hot noodles with the warm basil garlic oil until every strand is evenly coated.

The warm noodles absorb all of that fragrant curry-infused oil, giving you flavorful bites from the first forkful to the last.

Mila’s Tip: If the noodles seem a little dry while tossing, add a small splash of the reserved noodle cooking water to help loosen everything and create a silky coating.

Step 5: Assemble the Bowls

Divide the noodles among serving bowls, then spoon the savory beef over the top. Finish each bowl with a generous handful of the pickled vegetable salad and a sprinkle of chopped roasted cashews for the perfect crunch.

Every bite brings together tender noodles, rich curry beef, crisp tangy vegetables, fresh herbs, and crunchy cashews. It’s the kind of meal that keeps you going back for “just one more bite.”

Mila’s Tip: A squeeze of fresh lime and a few extra basil or cilantro leaves brighten everything up beautifully. If you’re feeling a little extra, top your bowl with a fried egg for an even richer, restaurant-worthy finish.
