  • 2 cups flour
  • 1 cup sharp cheddar cheese freshly shredded
  • 1/2 cup fresh chives
  • 1 tbsp baking powder
  • 1 tsp granulated sugar
  • 1/2 tsp fine salt
  • 1 large egg
  • 1 egg yolk for brushing
  • 3/4 cup heavy cream save some for brushing
  • 1 stick frozen unsalted butter
  • Optional coarse salt for topping

Method

  1. Grate the frozen butter into fine shards and place it back into the freezer.
  2. Whisk together the dry ingredients in a large bowl.
  3. Add the butter, cheddar cheese, and chives, tossing until coated with flour.
  4. In a separate bowl, mix the heavy cream and egg, then drizzle over the dry ingredients and fold gently.
  5. Preheat the oven to 400°F.
  6. Fold the dough into an 8-inch disk on a lightly floured surface.
  7. Use a scone cutter to make circles, or cut the dough into triangular wedges with a knife.

  9. Mix some heavy cream and the egg yolk in a bowl.
  10. Brush the mixture over the scones and sprinkle with optional coarse salt.
  11. Bake the chilled scones for 18–20 minutes, or until the tops are golden brown.
  12. Transfer to a cooling rack and serve warm with butter.

Notes

  • Keep the grated butter frozen until ready to mix it into the dough.
  • Chill the shaped scones for 20–30 minutes before baking.
  • Sprinkle coarse salt on top before baking if desired.
  • Serve warm with salted butter or chive butter.

These savory scones are a delicious alternative to sweet bakery-style scones. Sharp cheddar brings a rich, cheesy flavor, while fresh chives add a mild onion-like freshness that balances the buttery dough. Their golden tops and tender centers make them a welcome addition to breakfast, brunch, soup night, or a simple afternoon snack.
