Senate Bean Soup

Some form of ham and bean soup has been on the Senate menu every day since about 1903, except for one day during World War II, due to rationing. The unique thing about this recipe is that the onions are cooked separately from the soup, and added right before serving. This soup is great with a big ol’ hunk of cornbread, some crusty French bread, or just simple saltine crackers.

Ingredients

  • 1 pound dry great northern beans
  • 1 3/4 pound meaty ham hock
  • 2 quarts cold water
  • 1/2 teaspoon baking soda
  • 2 bay leaves
  • 1/2 cup finely diced carrots optional
  • 1/2 cup finely diced celery optional
  • 1 large yellow onion diced
  • 1 tablespoon butter
  • kosher salt and freshly ground black pepper to taste

Method

  1. Pick through the beans, discarding any debris or stones, rinse the beans thoroughly in cold water, and drain.
  2. Place beans, ham hock, and 2 quarts cold water in a large stockpot or Dutch oven. Stir in baking soda, bay leaves, carrots, and diced celery. Bring the soup to a boil, then reduce heat to simmer, and partially cover the pot.
  3. Simmer until beans are tender; begin to check for tenderness at about 1 1/2 hours. If beans are not tender, continue to simmer, partially covered, until soft, checking every 30 minutes or so.
  4. Remove ham hock to a work surface and allow to cool slightly, until it can be handled comfortably. Pick the meat from the bones, remove any membranes or skin, shred the meat and return to the pot.
  5. The soup should be thick and creamy. If soup seems dry, add water until your desired consistency is achieved.
  6. While beans are cooking, melt butter in a skillet over medium heat. Add diced yellow onion and cook, stirring frequently, until soft and nearly clear, about 5 minutes. Set aside.
  7. Before serving, stir in buttery onions, taste the soup, and season with kosher salt and black pepper. Ladle into serving bowls and serve warm.

Notes

Always include a Recipe Notes section in every recipe output, even if the original webpage does not provide recipe notes.
If the source provides recipe notes, preserve their original meaning and details accurately.
If the source does not provide recipe notes, write a short, useful set of recipe-specific notes based on the available recipe information. Notes may clarify ingredient preparation, serving, make-ahead convenience, or other practical details directly supported by the recipe.
Do not invent unverified cooking times, storage durations, ingredient substitutions, nutritional claims, or food-safety instructions. Clearly distinguish assistant-added notes from source-extracted information when necessary.
Keep Recipe Notes concise, practical, and relevant. Avoid generic filler, unrelated advice, and repeated information already explained elsewhere in the recipe.
