Blueberry Muffin Ice Cream Cake

Everyone’s favorite blueberry muffin gets a very good summer makeover in this Blueberry Muffin Ice Cream Cake. A golden graham cracker and gingersnap crust is layered with creamy vanilla ice cream, sweet blueberry jam, and chunks of blueberry muffins. Everything is finished with a crisp white chocolate magic shell, more blueberry muffin pieces, and fresh blueberries.

It’s easy to make ahead, easy to slice, and somehow tastes like eating a blueberry muffin alongside a scoop of vanilla ice cream—all in one very happy bite.

A Little Inspiration from My Nonnie

Without fail, every time I make an ice cream cake, I think of my Nonnie.

Growing up, she made her chocolate peanut butter ice cream cake all the time. It showed up at summer parties, birthdays, and family dinners, and it was always something everyone looked forward to. When she wasn’t making her famous ice cream cake, there was usually a peach dump cake somewhere nearby, served warm with a scoop of vanilla ice cream.

The older I get, the more I appreciate the way my grandma cooked, baked, and entertained. Everything she made seemed effortless, but it always felt special. Her food was beautiful without being fussy, and she had a way of making even simple desserts feel memorable.

Why Blueberry Muffins?

I don’t remember my Nonnie ever making a fruit ice cream cake, but she absolutely loved a good muffin. Blueberry, banana, chocolate chip—she loved them all.

She was also always picking up Trader Joe’s muffins and those little gingersnap cookies, making sure my grandpa’s favorites were stocked. So while this isn’t her recipe, I know she would have loved it.

I started with a classic graham cracker crust and added crushed gingersnaps as a little nod to her. My grandpa would especially appreciate that part.

Building the Ice Cream Cake

Make the Crust

The base starts with a mixture of graham crackers and crushed gingersnap cookies. Bake the crust until golden, giving it a buttery, crisp foundation that holds up beautifully under the ice cream.

Add the Ice Cream and Blueberry Layers

Layer creamy vanilla ice cream with blueberry jam and chunks of blueberry muffins. Gently swirl everything together so you get little pockets of blueberry and muffin in every slice.

Then freeze the cake until firm. This is a great make-ahead dessert, especially when you’re planning a summer gathering and want the dessert handled well before everyone arrives.

Finish with the Magic Shell

Once the cake is frozen, pour over a crisp white chocolate magic shell. I was inspired by the chocolate shell on my Nonnie’s peanut butter ice cream cake, so this little finishing touch feels especially meaningful.

Top everything with crumbled blueberry muffins and plenty of fresh blueberries.

There’s something so fun about turning a classic blueberry muffin into an ice cream cake. You get the familiar flavors of blueberry, vanilla, and warm bakery-style crumbs, but in a cool, creamy dessert that feels made for summer.

It’s nostalgic, easy to make ahead, and just a little bit special—which is exactly what I think a good family dessert should be.

The Details

Crust

  • Graham crackers
  • Gingersnap cookies
  • Brown sugar
  • Salted butter

Cake

  • Vanilla ice cream
  • Blueberry jam
  • Blueberry muffins
  • Fresh or frozen blueberries

White Chocolate Magic Shell

  • White chocolate
  • Coconut oil

The Steps

Make the Crust

Preheat the oven and line a 9-inch springform pan with parchment paper. Add the graham crackers, gingersnaps, and brown sugar to a food processor and pulse until finely crushed. Pour in the melted butter and pulse again until the crumbs are evenly moistened.

Press the mixture firmly into the bottom of the prepared pan. I like using the bottom of a measuring cup to really pack the crust down. Bake until lightly golden, then let it cool completely.

Tip: You can use all graham crackers if that’s what you have, but the gingersnaps are worth adding. They bring just a little warm spice that works beautifully with the blueberries and vanilla.

Layer the Cake

Spread half of the softened vanilla ice cream over the cooled crust. Spoon half of the blueberry jam over the ice cream, then crumble the blueberry muffins on top. Use a knife or spoon to gently swirl everything together.

Repeat with the remaining ice cream, blueberry jam, and more crumbled muffins, reserving a few pieces for decorating.

Don’t worry about making the layers perfect. Those swirls of jam and little pieces of muffin are what make every slice look a little different.

This is my favorite part because it always brings me back to my Nonnie’s ice cream cakes. She never fussed over making everything perfect, and somehow they always turned out beautiful.

Freeze

Cover the cake well and freeze until completely firm.

Make-Ahead Tip: This is an ideal dessert to prepare the day before a party or cookout. Keep it frozen until you’re ready to add the finishing touches and serve.

Make the Magic Shell

Combine the white chocolate and coconut oil in a microwave-safe bowl. Microwave in 20-second intervals, stirring between each, until completely smooth.

Let the mixture cool for a few minutes. It should still be pourable but no longer hot.

Tip: If the chocolate is too warm, it can melt the ice cream. Giving it a few minutes to cool helps create that beautiful crisp, crackly shell without turning your cake into a puddle.

Decorate and Serve

Pour the magic shell over the frozen cake, allowing it to naturally drip down the sides. Quickly scatter the reserved blueberry muffin pieces or crumbs over the top, then finish with fresh blueberries.

Let the cake sit for 5–10 minutes before slicing. For the cleanest slices, run a sharp knife under warm water, wipe it dry, and repeat between cuts.

Entertaining Tip: I love serving this at the end of a summer dinner. You can make the entire cake ahead of time and decorate it just before serving. It looks impressive on the table, but it’s actually one of the easiest desserts to have ready for a crowd.

  • 1/4 cup brown sugar

  • 7 tablespoons salted butter, melted

  • 3 pints vanilla ice cream, slightly softened

  • 1 jar (12–16 ounces) blueberry jam

  • 12 blueberry muffins

  • 6 ounces white chocolate, chopped

  • 1 tablespoon coconut oil

  • Fresh or frozen blueberries, for topping

Instructions

  • Line a 9-inch springform pan with parchment paper and preheat the oven to 350°F.
    Add the graham crackers, gingersnap cookies, brown sugar, and melted butter to a food processor. Pulse until the mixture forms fine, evenly moistened crumbs.
    Press the crust firmly into the prepared pan and bake for 10 minutes. Let it cool completely before adding the ice cream.
  • Spread half of the softened vanilla ice cream over the cooled crust. Dollop half of the blueberry jam over the ice cream, then crumble 4–6 blueberry muffins over the top.
    Use a knife or spoon to gently swirl the jam and muffin pieces into the ice cream. Repeat with the remaining ice cream, blueberry jam, and muffins.
    Reserve 2–4 blueberry muffins for decorating the finished cake.
  • Cover the cake and freeze for at least 4 hours, or until completely firm.
  • Combine the chopped white chocolate and coconut oil in a microwave-safe bowl. Microwave in 20-second intervals, stirring between each, until completely smooth.
    Let the mixture cool for about 10 minutes. It should remain pourable but should no longer be hot.
  • Pour the white chocolate magic shell over the frozen cake, allowing it to drip naturally down the sides. Immediately scatter the reserved blueberry muffin crumble over the top, followed by the fresh or frozen blueberries.
    Slice and serve right away, or return the cake to the freezer until you’re ready to enjoy it.
