How to Make Peanut Chicken Ramen Salad
Step 1: Prepare the Peanut Dressing
Start by adding the peanut butter, rice vinegar, tamari (or soy sauce), toasted sesame oil, olive oil, honey, and Thai red curry paste to a blender. Blend until the mixture is silky smooth, adding a little water as needed until the dressing reaches a pourable consistency. Taste and season with salt if needed.
If you’re planning ahead, the dressing can be made a day or two in advance. In fact, the flavors become even more delicious after a little time in the refrigerator. A double batch is never a bad idea—it also makes a great dressing for grilled chicken, roasted vegetables, or grain bowls throughout the week.
Want to customize the flavor? Try blending in a clove of garlic, a small piece of fresh ginger, a sliced jalapeño, or even a little ripe mango for extra sweetness.

Step 2: Assemble the Salad
In a large serving bowl, combine the shredded napa cabbage, broccoli slaw, crushed ramen noodles, cooked chicken, green onions, cilantro, basil, chopped peanuts, and sesame seeds.
Pour about half of the dressing over the salad and toss until everything is evenly coated. Add more dressing as needed until the salad is dressed to your liking.
If you’re preparing the salad ahead of time, wait to mix in the ramen noodles until just before serving so they stay crisp and crunchy.
For a little extra freshness, try adding seasonal fruit such as diced mango, mandarin orange segments, or blueberries. They pair beautifully with the creamy peanut dressing and add a naturally sweet contrast.

Step 3: Finish and Serve
Just before serving, sprinkle the salad with extra fresh herbs, chopped peanuts, and sesame seeds for even more texture and flavor.
The uncooked ramen noodles provide plenty of crunch on their own, but if you enjoy a deeper toasted flavor, you can lightly brown the crushed noodles in a skillet with a little sesame oil and butter. Let them cool completely before adding them to the salad to keep everything crisp.

Serving
This salad is a great choice for everything from casual weeknight dinners to summer cookouts and potlucks. It pairs well with grilled chicken, burgers, steak, or almost anything fresh off the grill.
Leftovers hold up surprisingly well, making them perfect for lunch the next day. If you’re serving it as a main course, freshly cooked shredded chicken adds a wonderful touch. Tossing warm chicken with the salad slightly softens the vegetables while helping the dressing coat every bite, creating a delicious balance of fresh, crunchy, and comforting flavors.
